2 1/2 cups all-purpose flour
1 cup butter or margarine
1 package cream cheese
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Serve with
Frost with desired frosting.
Method
1. Cream together the butter and cream cheese.
2.Gradually add sugar and egg continue beating until blended.
3. Add flour and baking powder gradually to butter/cream cheese mix.
Chill the dough for 1-2 hours.
4. Roll on floured board and cut in desired shapes.
5. Bake approximately for 12 minutes or until light brown at 350 degrees
F (175 degrees C).
Pineapple Cookies – Sri Lanka
Ingredients: ¼ cup butter flavored Crisco
¼ cup butter, softened
½ cup sugar
½ cup brown sugar, firmly packed
1 egg
2 cups flour
1 tsp. baking powder
½ tsp. salt
½ cup chopped walnuts
1 can (8 ounces) undrained crushed pineapple
Preparation: 1. Cream Crisco and butter; add white and brown sugars and egg; beat until light.
2. Add dry ingredients and mix together.
3. Stir in chopped walnuts alternately with pineapple. Blend well.
4. Drop by teaspoonfuls about 4 inches apart onto greased baking sheets.
5. Bake at 350°for 15 to 18 minutes. Yields: 3 ½ doz.
Japanese Date Cookies
Ingredients: 1 cup sugar
¾ cup flour
2 tsp. baking powder
1 tsp. salt
2 eggs, beaten
11 oz. or 1 cup chopped dates, add about 2 Tbls. flour to coat the dates
1 cup chopped walnuts
Powdered sugar
Preparation: 1. Sift and mix together the sugar, flour, baking powder and salt.
2. Add eggs and mix well.
3. Add dates and nuts.
4. With a teaspoon form dough into balls and place on greased baking sheets.
5. Bake at 350° for about 18 minutes or until brown.
6. Dust with powdered sugar. Yield: 3 doz.
